It seems like you're drawing inspiration from the paper leaves hanging from the ceiling. This uses the same material, paper, to give the material in bulk a new form. I wonder what the significance will be of a giant paper dragon hanging from the ceiling. Also, swaying it in some manner, by hand or using a vent, and projecting lights of different color are interesting options to explore.
This is a great educational goal for an artistic project. The ukulele is also an unconventional instrument to use to attempt to teach the topic. Projection mapping seems like a technology that will grab a child's attention and foster an unprecedented appreciated for both tech and the instrument and learning about music while playing music.
I like your idea a lot, and I agree that combining pictures of various spots in CMU with different art styles is really cool. I would recommend surrealism artists like Magritte, Dali, and Escher. You can even play with the idea of time and infinite space if you have enough time. I look forward to your outcome, good job!
I am really interested in your project, especially how you are going to execute the part where you say stars will fall and become lights in the buildings when clapping is detected. The idea of building an installation that simulates how human beings force impact on nature is also really beautiful. However, to be honest, I think it might be a little too challenging to accomplish; you might have to compromise some of the effects you want to achieve during the process when you figure that the project is way too complicated, but I am really looking forward to your outcome and I hope that it works out!
